Mountain Traverse is a heavily wheated IPA hopped with fruit forward hops. To create this beer, we made a grain bill comprised of approximately 30% malted white wheat to help add body and a slightly crackery flavor. We then hopped the beer with Sultana, which is very pineapple forward, El Dorado which has notes of stone fruit and watermelon, and a new experimental hop from South Africa called XJA2/436 which add notes of lemon, bergamot, gooseberry, and papaya. On top of all of the standard fruit forward flavors these hops give, we did decide to up the bitterness on this beer slightly more than we do on a lot of our hazy IPAs. We fermented the beer with our standard hazy IPA yeast strain that helps leave behind a bit of residual sweetness.
