Lime and Basil Seltzer is a hard seltzer with lime and basil. Who’da thunk?! We created a sugar solution using cane sugar and water then fermented it with a wine yeast that creates a clean and relatively neutral-tasting hard seltzer. It fermented completely dry so there is very little residual sugar and sweetness in this batch. When fermentation was complete, we blended in Tahitian lime juice and basil flavoring before carbonating it to a relatively high level. The resulting product is a super refreshing seltzer with hints of lime and basil, almost reminiscent of a margarita.
